Quests of unobtainable perfection exist. Dan’s Holy Grail is the perfect pilsner. His ideal being an old school blur of German and Czech styles. Heirloom pilsner malted barley and a double decoction mash begin the maddening complex journey. Joined by Bavarian royalty Diamant, Mittelfruh, Saphir, Select, and Hallertau Blanc hops that gracefully weigh in a quaffable 35 IBU. The simplicity of a six week lager forges this pilsner treasure.

12 oz bottle purchased at Sendik's Fresh2GO - Marquette in Milwaukee, Wisconsin. The pour is a clear pale golden with a fizzy white head that falls quickly. The aroma is sweet malt, floral hop and a bit of mineral earth. The taste is the sweet malt mixed with the floral grass earth hops. The palate is light bodied with active carbonation and a dry mineral finish. Clean and simple Pils, easy drinking.

As much as I love this brewery, this beer was a disappointment. I find the choice of hops to be strange, the mix of Czech and German styles not to work, and the beer to be too sweet. It is drinkable enough but not what I think of when it comes to a Czech or Geman pilsner.

The nose shows clean notes of bready malt.

The palate is well carbonated and light bodied. Light bready malt notes throughout with a light bitterness on the finish.

Aromas remind me of working in the wash house at the G Heileman Brewery after I got out of the Navy. Clean and fresh pilsner. Flavors are similar to nose with great balance between bitter, sweet and carbonation. Wish it had a little better head retention.

12 ounce bottle from Total Wine Brookfield, 8/6/23. Clear gold, large white head, good retention. Aroma of grass, Noble hops, pale malt. Taste is Noble, minty, grassy hops, pale bready malt. Well balanced, crisp. Nice.

Bottle, pours a clear gold with a finger of white foam that lingers. Great lacing down the glass. Peppery hops, mineral and light bready malt aromas. Lots of peppery, bitter hop character on the palate. Drying finish, very reminiscent of the Northern German pilsners. Great stuff!

Tap. Pours clear yellow, small white head, good lacing. Aroma is apple, grain, noble hop. Flavor is light sweet, light plus bitter. Light body.

12oz bottle. Really nice stuff. Medium bodied, oh so drinkable. Crackery pretzel touched malt. A lot of hop depth, which is sort of odd and unique for the style. The Hallertau Blanc, I imagine, takes it in the most noticeable direction, giving it some peachy-orange candy notes. The other hops give it more of a classical feel. Good stuff, but certainly not a textbook Pils, more of an IPL.
