Finally, the time has come to complete the first series with which we entered the amazing world
of wild sour beers: the Savages.
After long aging, it is now Savage Delta’s turn.
To be honest, we didn’t plan on aging this beer for so long, but since we treat each of our beers with the same care, meaning we are never in a “hurry” to get it to market as soon as possible, we waited for all the aromas and flavours to come together for this beer as well, respecting you, our customers, friends, and associates.
During the aging process, a strong sourness developed, which took a long time to “soften”. As a reminder, this beer was brewed in 2019 (yes, even before the era of Corona). It was then aged for two years in wooden barrels and then in the bottle, until today. Of all our beers, Savage Delta is the beer we aged the longest – four years in total – and the benefits of long aging are definitely noticeable.
The flavours and aromas you can expect are fruity and slightly balsamic, along with moderately strong aromas of oak, vanilla, blackberry, blueberry, hay and leather.
The Savages alphabet is hereby completed. Now it’s your turn to open your Delta for lunch or dinner and enjoy the wonderful flavours of this wild and sour beer.

Bottle, 750 ml at Mlinarica at RBESG. Brown with almost no head. Acetic and vinegar initially, some dark fruit notes, sweetish note in the middle, wood.

0.75l bottle at Mlinarica. Hazy ruby-amber body, off-white head. Sweet taste, dried cherry, bretty notes in the aroma, bit sourish, oily, light leather. Soft, sweetish cherry-driven taste with a solid sour kick, a bit bitterish, but smooth and pleasant for my tastes, drinkable. Some were complaining about excessive sourness, I didn't feel like that myself.

Sample from the bottle at source, Zagreb. Color is murky brown with very small white head. Aromas and flavors: Berries, dryness.... pretty Strong flavors actually.

Bottle at the brewery. Thin body, med-high carbonation. High sourness, substantial acetic. Feels rough, hard to drink. There is lots of dried fruits in flavour, which also hints at heavy oxidation. Barrel ageing does not have to taste like this. The fine points of saisony phenolics and red wine flavours are lost here. High sourness, medium tartness and medium caramelly sweetness. Average-good.

Bottle at brewery. Reddish color with minimal head. Red wine, wood, light caramel in Aroma. Taste is red wine, cherry sweetness, funk, very tart finish.

Bottled 330ml. -at Spicy Days Zagreb, shared with hrabren. Brownish coloured, no head at all, dried fruits and caramel in the nose. Malty, caramel, dried fruits, notes of barrel and sourish finish. Light wine and salty touch as well.

0.33 l bottle shared with Ogi. Murky brown, minimal head. Light dried fruit finish, caramel, some glue, some spice, light aceto balsamico. Oak heavily present in the flavour, mineral, salted caramel and raisins. Sour cherry. Sharp sourness in the finish, lasting. Low carbonation. A bit too heavy on the oak.
