Skjoldmøy/Shieldmaiden is a dry/medium dry cider available inn 0,75L bottles (at the farmshop in Randaberg) and keykegs. Based on Rubinstep, Rubinola and Rød Aroma apples grown at Sandalen Gård Vistnes -Randaberg.
Method: Juice from ripe Rubinola, Rubinstep and Red Aroma apples are blended prior to fermentation. Inoculated with yeast.
The juice is then fermented under 100% controlled (optimal) yeast temperature.
Filtrated and put on tank-storage. Bottled/kegged about 6 months after harvest.
Initial release for kegs was measured at 6.4% ABV, the next release (other tanks) for bottles was 6.8%, the taste was identical.

Big fizzy shortlasting head, slightly cloudy light golden straw colored. Aroma is slightly fresh floral, apple peel, leafs, flowers, hay, apple cores, grass, yeast, yellow apples. Taste is mild sour-ish fruity, unripe apples, grass, hay, flowers, citrus acid, minerals, apple peel, hints of sour winegum. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Fair enough.

Bottle @ home. Courtesy of Gunnfryd, Clear, pale golden with almost no head, sparkling carbonation. Nice, mild apple aroma. Almost to gentle. Taste is fresh and clean apple flavor with a nice balance between sweetness and acidity. Some tannins. Medium body with a dry finish. OK, fresh and easy drinkable, actually not so much apple taste here.

Bottle, 75cl. A sparkling lightly foggy straw colored cider with a thin layer of bubbles. A bit gentle aroma I think, but with clean, fresh apple scents. Some apple peel, but mostly juice. Vague notes of grass. It's nicely carbonated, refreshing, dry and full to medium bodied. Some residual sweetness too. Clean apple juice flavor with some notes of apple peal, grass and orchard. Long finish. A very refreshing one, tasteful too, but not much complexity going on. 230927

Fra flaske på Malt&Humle, Gladmaten -23: klar lys strågylden med fint bruseskum. Deilig eplearoma og intens, ren eplesmak av Jo Arilds favorittepler Rubinstep og Rubinola. Rød aroma er også kjempegodt, så resultatet er (som vanlig fra Sandalen) helt upåklagelig, og mersmaken er naturligvis hjertelig til stede. Fint karbonert og ytterst forfriskende.

On tap at Cardinal, Stavanger. Pale straw colour, pours sparkling with a large but shortlived head. Aroma of apples and apple cores, a hint of sulphites. Fresh flavour of Norwegian eating apples.
