A: hazy red, small, foamy, tan head.
A: 'kramiek', raisin, red apple, sour cherry, vanilla, marzipan, blackberry.
T: sour cherry, plum; sweet brioche & almond, malt vinegar.
F: tart cherry & stone fruit, woody tannins, funky grape, vanilla.
P: medium body, moussy texture, average carbonation.
Lovely, looking forward to a revisit.

Little cloudy red brown beer, creamy beige head, stable, adhesive, leaving a nice lacing in the glass. Aroma: fruity, vinegar, funky, earthy, woody impression. MF: lively carbon, medium body. Taste: sour start, a bit oily, some vinegar, a bit fruity, little bitter, earthy touch. Aftertaste: nice, fruity, some strawberry, vinegar touch, a bit sweet, red currants, some jam, nice!

Deep reddish brown colour, beige foam. Very complex, fruity, red berries, wood, balsamico, sweet vanilla, vinous tartness. Great!

Flemish red with a portion of rye, fermented with Dok's complex house yeast culture for sours and aged on both bourbon and white wine barrels - created especially for their second venue, Café De Welkom, housed in what was formerly the Brouwbar, which ceased to exist one and a half month ago now. Moussy, pale beige, quite stable, medium sized head on a hazy ruddy-brown beer with burgundy red glow. Aroma of red grapes, blue plums, fresh figs, bourbon, strong vanillin-exuding oak wood, blackberry juice, caramel, passionfruit, cooked blueberries, yoghurt, oxidized dry white wine, tawny port. Very estery onset, lots of plum, blackberry and blue grape impressions, slight grape skin tannins even if no actual grapes were used, medium carb with full, smooth and eventually quite vinous body; brown-bready, hard-caramelly and slightly nutty malt core under drying lactic tartness and pronounced tannic woodiness, both remaining well in balance with the rounded 'forest fruitiness' and vinosity of the basic beer; clear 'grapey' notes from the Chardonnay in the end, more obvious than the bourbon even though the latter does show up in the end as well, bringing back a sweet element. Dark-fruity, 'plum-juicy', vinous and very complex finish, even showcasing a moment of toasty malt bitterishness - a 'kaleidoscope' of flavours, elegant, bright and all perfectly aligned. The fourth sour by Dok I believe - and again one that manages to stun me. These Dok sours need a lot more exposure as they have been truly magnificent so far. Very welcoming indeed.
