Okay was made from a blend of two deep golden worts produced in the Novembers of 2019 and 2020. The grist contained caramelised and toasted malts, to complement the aromatics of the honey. Fermentation took place in four old white Burgundy barrels for just shy of two and three years respectively. The barrels selected were those providing noticeable perceived sweetness, to enhance the perception of the honey, along with a balancing acidity.

Raw Scottish heather honey from Heather Hills Farm was added just prior to bottling. This provided sugar for conditioning as well as trapping the delicate earthy aromatics in the bottle. The resulting beer is relatively full bodied with a surprisingly fluffy mouthfeel.

--Bottled at RBESG Grand Tasting 2023. -- Hazy golden, rich firm head. Aroma of sour apricots. Tart with medium body and rounded mouthfeel. Citric acid, sour apricots, some hay. Low bitterness.

Bottle via Mills online shop. Pours clear copper with a decent beige cap. Light sharp, caramel, sour apple, some honey sweetness, white wine barrel dryness. Some minerality. Medium body with foamy carbonation.

Bottle. Mills online. Mostly clear copper colour. Nicely sturdy just of white foam. Loads of mineral. Oaky white wine. Lightly tart leathery funk. Juicy and tart. Foamy and clean. Tart mineraly oaky white wine finish. Glorious.
