A fascinating bottle & blend of varieties; the meaty, savoury profile of the Dabinett, fermented across winter, and then conditioned with some fresh, light, tangy Jonagold juice the following year... Expect some classic Dabinett characteristics, savoury & full textured. It has been bottle conditioned with apple juice from the Jonagold variety of 2022, adding some light, crisp aromatics and gentle fizz.

Super clean, quite dry, lightly tart apples, some musty and dank and bitter peel, nice spritzy carbonation. Bone dry finish. Classy stuff.

750ml bottle from Fine Cider Co. Opened with a loud pop. Hazy gold colour, fizzy white foam head and aroma of apple, fruits, funk. Taste is sweetish, apple, tart, fruity, with some skin, meaty funk hints and drying bittersweet tannins. Medium bodied, spritzy carbonation, dry tannic finish. Nicely drinkable.
