A black beer with a beige lacing. Aroma of caramelized malt, syrup, strong dark malt. Taste of vanilla caramel, syrup, sweet dark malt, boozy finish.

2/I/24 - 33cl can from the brewer, shared @ the Abeels’ place, BB: XII/2024 (2024-11) Thanks to Klaas for the can!

Clear dark brown to black beer, small creamy beige head, unstable, falls down quickly, non adhesive. Aroma: maple syrup, good roast, coffee touch, a bit oxidized, caramel notes, earthy, chocolate. MF: ok carbon, medium to full body. Taste: nice, maple syrup, good roast, pretty bitter, some alcohol, quite some caramel, coffee notes. Aftertaste: bitter, a bit nutty, very roasted, chocolate notes, maple syrup, caramel, bitter finish, very decent stout!

Pours black, no real head. Scent is salted caramel to me, not very maple like. Taste is fairly full, sweeter side. Salty, but again more like salted caramel than maple to me. Sticky sweet, caramelly finish. Medium thick, medium to medium low carbo. Very decent, but had hoped for (far) more maple and less caramel.

19 August 2023. At 13de Gents Bierfestival. Cheers to Anke, Tim & so many others!

A: hazy black, stable, foamy, beige head.
A: pure maple syrup, chocolate sauce, dark fudge, mocha.
T: sweet candied plum, fudge, maple syrup, chocolate powder, mocha.
F: herbal hops, woody maple, subtle salt, bit bitter.
P: medium to full body, oily texture, soft carbonation.
Excellently balanced Pastry Stout.

Rerate from the can. More 'darker' elements here like fondant, toast, espresso, pecan, tobacco, black olive, but evidently maple syrup as well. Sweetish dark fruits, bitter toast & coffee, salty caramel. Earthy hops, quite bitter coffee, maple and even some grapefruit somewhere. Still so good. (Edited 10/03/2025.)

New Totem stout containing sea salt and maple syrup, created for beer festivals (with, obviously, the Gent Bierfestival getting the debut) and so far only available from keg - apparently there are no intentions to can this one. Creamy, stable and firm, pale greyish beige head, black robe with hazy mahogany edges. Aroma of indeed maple syrup running through it all but not overwhelming notes of toffee, dark chocolate, macadamia nuts, cappuccino, hazelnut purée, vanilla, cognac, caramel, old brown honey (probably just the maple syrup again) and bayleaf. Densely sweet onset, 'candied' with clear maple syrup effect though again it remains well in balance with the other flavours, ranging between blackberry coulis, dried fig, plum jam and a brief touch of black olive-like umami; soft carb, thick and oily mouthfeel - but not so syrupy that it hinders drinkability. The salty aspect is there and blends well with the toffeeish side of the malt bill to create a 'salted caramel'-like effect, but does not overpower and remains a spicy detail rather than a determining flavour. Layers of toffee, bitter black chocolate and molasses ensue, still subtly sweetened by the maple syrup and even more subtly salted, ending with a citric hop bitter edge and warming, bourbon-like alcohol, which remains firmly in place. Another Totem masterpiece, too bad it will not be made available in canned form like their other beers!

Gents Bier Festival 2023 - Black with creamy head. Aroma and flavour have bittersweet honeycomb. There's a genuine saltiness in the finish.
