For this small batch Druif/Aardbei, we blended a strawberry lambik and a fine Grüner Veltliner grape lambik. The strawberries were handpicked at Les Petits Fruits, the grapes came from Christoph Hoch. For this combined maceration and blending, we used more than 11 different lambikken, coming off five different barrels. We let the fruit sit for more than five months, and the weighted average age upon bottling was more than 18 months. The total fruit intensity is 405 grams of fruits per litre of fruit lambik.
A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Christoph Hoch is a Demeter-certified wine maker from Hollenburg an der Donau, Austria. He is not only crazy about our lambik, he also has some of it ageing in his own barrel cellar!

Orange body, with a medium head. Smooth aroma of white grapes, strawberry, stone fruits. Tastes quite similar, with a bit more acidity. Medium mouthfeel, with a moderate carbonation. Finishes moderate acidic, vinous, with moderate strawberry, Very tasty. Great balance between the grapes and the strawberries. Drinks very smooth and elegant. Score: 9 / 4 / 8 / 4 / 17

Taster From bottle at home, shared by Christoph. yellow cloudy color, small white head. smells parfumy, strawberries, vinous, tannins, funky. Lovely smell. full body, soft carbonation. tastes grapes, vinous, subtle strawberries, earthy, grassy, herbal. finishes dry and light to medium sour with notes of grapes, herbal and peppery notes. Very nice one

Pours hazed blonde. Small to no white head. Scent is mild, but present strawberry. Grape is earthy, fruity. Some lambic funk, fairly sharp. Taste is full, tart, earthy / green backbone from the grapes, under a full on strawberry blast. Lovely combo ! lambic funk in the back, quite lovely indeed .

One of several new fruit lambics by 3 Fonteinen making use of grapes cultivated by Christoph Hoch in Austria, best known for his Riesling wines. This one interestingly combines grapes with strawberries – a fruit combo I do not think I have ever encountered in lambic before, or even non-lambic fruit beers. Egg-white, opening, bubbly yet retaining head, hazy yellow-golden robe with warm apricot tinge – clearly white grapes were used, and strawberries, though red in colour, typically do not generate a lot of colour when used in beer. Aroma of ripe white grape and very clear strawberry but more white than red strawberry for me, apricot jam, lemon juice piercing through, sugared cucumber, damp hay, stale urine, unripe pineapple, dry earth, wood. Tart, crisp, lemony-sour onset, ‘grapey’ from the start with sweet strawberry aspects coming in but not dominating; hints of gooseberry and even light (sour) pineapple too. Softish effervescence, vinous body, sweet white wine and white strawberry contrasting with the lactic-lemony sourness of the lambic but this colourful play of dry and juicy keeps it highly interesting throughout. The vanilla-like aroma from oak wood complements this fruitiness nicely; some damp hay and sweaty Brett funkiness adds a ‘wild’ kind of edge. The sweet aroma of strawberry appears very persistent in the end, but for me it works well with the sours and tannins – this is a very radiant, lively, colourful fruit lambic by all means.

Fruity, a bit sweet, sour. Actually nice-tasting strawberry and a fair amount of it, some green grapes. Smooth, very tasty.
