The Chimay Blue is a dark ale with a powerful aroma. Its complex flavor improves with passing time. The 75-centiliter version (since 1982) is called ''Grande Réserve'' because of its great storage potential., It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956. But after its great success, it was decided to offer it permanently.

Birth Year beer. Might have been infected, it is super tart like an oud bruin.

2018. Dark brown. Aroma of raisins, caramel, hard candies, dried dark and red fruits, spices, chocolate. Very intensive, sweet and belgian. Taste of caramel, raisins, spices, chocolate, some fruits. Not as sweet as aroma. Aroma announce sweet and full beer but taste is medium bodied and drier. Medium carbonation. Very nice one but obviously expected more.

75cl bottle. Pours roan brown with reddish highlight when held to a light. Medium beige head that slowly recedes. The aroma features mixed dark fruits, red fruits, Belgian type yeasts and something that reminds me of spruce tips. The taste is raisins, dates, plums, some spices, vanilla, and colas. Finishes with lingering Belgian yeasts. The palate is full and creamy with soft carbonation. Overall; Top shelf stuff. My old age has taught me to appreciate these old masters when I can get them.
