Avium is a foeder-aged American wild ale aged on local cherries. Featuring both Balaton and Montmorency varietals from our friends at Burtt’s Orchard in Cabot, VT. This tart yet balanced ale reflects our deep appreciation for North Country agriculture and the people who work the land.

50cl bottle pours a murky, cherry color with basically no head. Nose has cherry and apples, light barrel, light cheese. Flavor is crab apples and tart cherries, neutral barrel, a little cheesy funk. High acid, tart finish.

Foam draught, 8/13/22. Hazy, soft pink, small, pinkish head. Soft, well-developed, even lacto-malic notes with bright, deep cherry flesh and well-macerated juice. So balanced and well-aged. Soft cherry and lactic acid with mild tartness and bright cherry flesh. Malty texture, high attenuation. Clean, no acetic character. Growing juicier with warming.

Bottle, at share, thanks to nimbleprop. Pours pinkish. Soft, minerally, cherry, pear, light nuttiness, white grape. Medium body, nice high carbonation. Good.
