Back in October, we made a challenge to our head brewer, Lally. The test? Something we'd never done before - a Christmas themed beer. Never one to back down from a task, the first phrase on his design sheet was simply "A beer that makes you feel like you're in front of a roaring fire, even if you're not". Opting to go down the Imperial Stout route, we got on the phone to our pals over at Simpsons Malt to collaborate with them and use some of their newest specialty malts. With a grist bill of Chocolate, Double Roasted Crystal, Brown, Medium Crystal, and Aromatic malts, as well as our tried and trusted Extra Pale and Oats, we've complimented this big, bold stout with Cinnamon, Ginger and Nutmeg to impart a distinctly seasonal vibe; creating maybe our best Impy yet.

0.44 l can, huge thanks to Višnja666 and her boys, shared with SašaMops, Višnja 666 and Jadran. Oily dark brown to black, small off-white head. Intense spicy nose, cinnamon, nutmeg, powder sugar, vanilla, hibiscus. Berries, a tart touch from the ginger. Nutty, chocolate, spices, toffee. Smooth, warming. Some sweetness in the finish.

Can sample at a tasting at Yoav's place. Black, tan foam. Chocolate, cinnamon, nutmeg, ginger, alcohol, sweet, umami, spicy, some bitterness.

Can from Eltham Wines. Black pour with a tan head. Nose is cloves, cola, ginger snaps, coffee, dark chocolate, nutmeg which segues nicely into the taste, touch of coconut in there too. Warm spicy finish.

Keg at the Elbow Room Ale & Cider House, Hinckley. It says something about Polly's output that despite the same I assumed it was a TIPA and not a stout. So a thrill to have a dark beer from them. And it's black with a thin ring of beige head. Aroma is dominated by liquorice with a bit of molasses. Sweet taste, almost too sweet with liquorice dominating. Finish continues sweet with more liquorice in the aftertaste. Yeah, the liquorice is way too dominant but that can't take away from the fact hat this is a brilliant strong stout.

440ml can. Pitch black with a beige head. Aroma of spicy cinnamon, ginger, nutmeg, roast malts. Taste is spicy - plenty of cinnamon and ginger, not so much nutmeg, base beer is roasty and chocolatey with some booze in the finish.

440ml can. Pours jet black with a small head. Aroma is has roast, cinnamon and ginger. Taste has yeasty dark chocolate to start with a roast ginger finish.

Can at Ebenezer’s, Crewe. Lots of alcohol and roasted malts in the aroma. Pours almost black with minimal (i.e. very hard to produce) beige head. The malts are all over this again in the mouth, but there’s also chocolate, vanilla, alcohol and hints of treacle there as well. Finish is dry and boozy. Excellentb – plenty of oomph, and not too much flavouring.
