A barrel aged wild double IPA with spruce tips. Originally brewed as a mosaic sour DIPA with our fresh sour mixed culture of kveik and lactobacillus before one year in merlot barrel with our wild house culture and dry sprucing with foraged spruce tips.

75cl bottle @ monthly tasting, Chez Sophie, Nov 21. Thanks Mike for this. Misty amber appearance, small white head. Interesting, lots going on, not getting much merlot but plenty of fresh fragrant spruce tips coming to the fore, bolstered by a gentle wild sourness, some mild sticky marmalade and kveik pineapple. Again, lots of elements at play and quite a history to this beer going by the description, but seems to work.

Fun Boy Five: 22nd November 2021, Beer Share in Chez Sophie, Shrewsbury. Five guys splitting beers. Thanks Mike for the 750ml bottle of this. Amber bodied, light mist within; wispy head. Bit too 'funky' for my palate but it got less 'sour' as it warmed a little, sprucy and herbal notes temper the wild sourness a bit.
