Tam is a wild dark beer made in collaboration with Restaurant De Nieuwe Winkel from Nijmegen. The beer is made with chestnuts and is an ode to the autumn months that are coming up.

The chestnuts are koji fermented by Restaurant De Nieuwe Winkel and then roasted. It gives a warm and nutty character to the dark beer. With this beer we also try to stimulate the chestnut cultivation in the Netherlands. So let yourself be surprised, order this delicious beer and help the chestnut growers!

Bottle drunk at home watching either The Witcher or Foundation, I haven't decided yet 😎. Mostly clear dark brown on first pour, nose of dark caramel and farmhouse goodness with hints of jammy plum and blackberry. Great flavor, lightly roasty coffee-like notes with subtle sourness that's very pleasant and gives a nice kick of complexity. I would not have guessed chestnut but indeed it's a bit nutty.

Small to medium cream head, reasonably stable over opaque amber-brown beer. Earthy, lactic acid, oak galls, ink, dark malts, fleeting hint of smoke. Bitterish-sour, earthy & woody. Again lactic acid; cacao powder. Light body, bit slick, well carbonated. Nice! I would have expected more impact from the chestnuts, but pleasing all the same.

Bottle. Dark brown with big tan head. Sour grains, indeed some chestnuts, light funk, overripe dark fruits, some bitter herbs, nori without the salt, very earthy. Medium sour, lighter sweet and bitter. Medium bodied with a bit creamy and oily feel. Quite good, maybe better than the first one.

Bottle. Bit hazy dark brown. Funky, earthy, vinous, light coffee. I don’t get a lot of chestnuts but there’s some earthy grape skin fruity notes that probably come from them. Balanced mix of sweet, sour and bitter. Decent beer.

Tap at Arendsnest, 8th February 23. Pours brown, aroma is tart, caramel and malts. Taste is sour,,tart and roasted malts. A bit muddled, quirky

Opaque dark brown colour with lasting head. Aroma and flavour have an obvious wild, funkiness. There's a slight vinegar acidity too akin to a Vlaams Bruin.
