Bottle, late Sep release, drunk 10/16/16.
Apricot-golden body shows good clarity and is topped by a beeswax-flecked, off-white head that rapidly fizzles out.
Apricot is quite clear in the nose, tart and lightly juicy; very authentic. Funky, mousey notes from the lactic character with lemon, yogurt and backing cracker-biscuit grains. Salinity rather low and to that end, it smells almost more along the lines of a golden sour with apricots (which of course, is very close to what today’s American gose is). No alcohol or flaw with very light honey-vanilla sugars remaining behind to combat the strong acidity.
Tart, bordering sour in the mouth with plentiful fruit acids and a strong flavor resulting. Low on the saltiness, again, so it’s not quite as round and soft as it could be. Contributing to this, the carbonation is extremely fizzy/sharp, loosening the body. Moderate lactic character, biscuits, graham cracker and light honey from the malt help allay this to some degree. No alcohol or flaw. Lots of acidity lingering. Good flavors/aromas, but the texture needs a lot of work and it’s very acidic overall.
