We developed Pete’s Wicked Tripel in collaboration with our good friend Pete Slosberg. Pete is a real legend in the USA. He is in fact one of the very first to launch a "craft beer" on the American market back in the 80’s: Pete’s Wicked Ale. He was at the very start of a true revolution! After a career in beer, he successfully threw himself in the world of chocolate. He came up with the idea to combine his two passions by adding cacao nibs to aromatize a Tripel.
We did not have to look very far to find cacao nibs of remarkable quality. Only a few minutes from the brewery, our friend Frédéric Blondeel has his chocolate workshop. Known as one of Belgium’s best chocolatiers, Frédéric chose a variety of highly aromatic cacao nibs. He then roasted the nibs himself in his workshop in Koekelberg. As a base we chose a blond beer, as it would be easier to detect the addition of the cacao beans. We then added the nibs to the beer during fermentation. A bit like a dryhopping, so that our yeast could extract and transform the aromas in the best way. But be aware, we are talking about cacao beans, and not chocolate. So do not expect to find any notes of chocolate in the beer, this was not our intent! We were looking to add very subtle aromas, and we succeeded.
The result is a very complex and at the same time highly drinkable beer, despite having 8 ABV. At first in the aromas we find touches of green coffee. They blend with the fruity fermentation aromas, a beautiful maltiness and a touch of citrus. Secondly, the cacao will develop in the after taste, in all its complexity, warmth and length. The cacao nibs also played a part in the interesting full texture of the beer. To bring out the aromas to the fullest, we recommend drinking the beer between 8 and 10 degrees Celsius. According to your taste, this can even be warmer.

Bottled 12 Sep 23. Golden body, with a big, creamy head. Aroma of lemongrass, citrus, flowers, some herbs, bubblegum, dough, some pine. Tastes similar, while with quite a lot of piney hops. Creamy mouthfeel, with an average carbonation. Finishes dry, bitter, piney, citric, yeasty, a bit grassy. Very nice. The cocoa faded by now, I didn't get it at all. The hops are still really prominent, with lots of crisp pine notes towards the finish. Really smooth for the ABV. Score: 8 / 4 / 8 / 4 / 15

330 ml bottle. Pours amber with moderate head. Initial aromas are skunky... Settles to chocolate, lime, vague fruit and soft toasted malts. Flavors of thick malts, white chocolate and limes.

I don't know why, but I feel like this triple is a little thin. Some booze, plenty of florals and light coriander. Pours golden with some head and lacing. Some lime peel in the finish. Tap at Snally.

Not a typical Tripel but brilliant. The cacao nibs basically just add a bit of tropical bitterness. Great compliment for this Pecorino cheese. Collab with THE OG Pete.

Flaska från Etre Gourmet. Disig varmgul vätska med högt skum. Torr, krispig och relativt besk för att vara en trippel. Påtagligt bitterhumlad med harzig och gräsig humle. Snygg god och typisk för de la Senne.

330mL bottle, best before September 12, 2024, drunk August 11, 2024. Got a bit of the sediment in the glass, by accident, but not much. Still pours a glassy, brass-golden with a large, well-retained, off-white head. Nose is yeasty as hell in a good way. Some citrus is a bit at odds with the mildly chocolatey, earthy cacao. Vanilla and more citrus on the finish with some sweet, bready malts. Not boozey nor are there any off-putting estes/phenols. In the mouth it has a wonderful yeast signature. House mineral, hard water, plaster, fruits, etc. etc...Some strength to it is about the only Tripel-character, maybe a bit of acid and citrus, but otherwise, just very de la Senne, unique and Belgian. I was skeptical of the cacao and while I don't think it's a knockout, it also isn't a problem or clashing with anything. It's subtle, earthy, mildly chocolatey. Fine carbonation, lots of malt, good dryness and overall balance. It's polished and clean with no crude phenols and esters.

Pale blond colour with lasting fluffy head. Aroma is like a regular Belgian Strong Blond (not per se Tripel). Initial malty sweetness. There is a certain whey like taste too. Then a back note of cacao but quite mild.
