Honey beer from this brewery in Brakel (about twenty miles south of Ghent), apparently in existence for about a year but unknown to me till I stumbled upon it a few weeks ago in Akker & Ambacht, an organic shop in the Brugse Poort quarter of Ghent (where Hedonis is traditionally well represented, not the least because the current head brewer of Ghent's Dok Brewing Company started his career there). Thanks Priscilla! Medium thick, pale yellowish beige, dense, tiny-bubbled, membrane-lacing, even head slowly breaking over an initially clear, chestnut-bronze robe with copper glow, turning hazy with sediment. Aroma of yellow raisins, ripe pear, candied dates, caramel, dark honey, dried crandberries, fried apple sprinkled with blonde sugar, Brazil nuts, dried thyme, vague coffee grounds faraway in the background, touch brandy, whiff of wood bluegrass. Sweet onset, smooth fruitiness reminiscent of dried fig, ripe pear, blue plum and red apple, perhaps a vague touch of banana, with a slight sourish undertone; softish, fine-bubbled carb adding more sourishness through a smooth, slick, supple mouthfeel. Caramelly maltiness with a brown-bready edge, ever so slightly toasty in the end, where this toasty bitter aspect meets a more outspoken, herbal hop bitterishness - though the sweet side remains stronger. Nevertheless nicely drying in the end, albeit more from brandy-like alcohol than from hops or toasted malts; the honey brings a pleasant retronasal floweriness and dark-sugariness which in this case really adds to the experience, even with a certain ripe red berry-ish juicy touch to it. Fruity, warming, sweet in a noble kind of way: this is an enjoyable winter warmer for sure, though perhaps the alcohol could have been better hidden. Typical La Trappe style quadrupel with a slight twist to it, just perfect for a freezing February night.

Pours unclear, dark amber. Small white head. Scent is full, sweet, mildly herbal. Spicy, soft chocolate. Taste is full, mild honey, yet not very thick. Herbal, spicy, would enjoy a more silky and smooth body, but it's very decent nevertheless.

Kerstbier Festival. Clear reddish brown beer with a beige head. Aroma of caramelized and herbal dark malt. Taste of herbs, dark malt, caramel, raisins.

Clear brown beer, small creamy beige head, pretty stable, non adhesive. Aroma: banana, yeasty, malty, grains, some caramel, sweet impression. MF: lively carbon, medium body. Taste: a bit sourish, malty touch, caramel, lots of banana, dried fruits, some raisins, yeasty. Aftertaste: bitter, soft roast, caramel, very malty.
