Van alle wilde experimenten die we doen op onze barrieken blijft onze Méthode Gentoise onze favoriet om mee aan de slag te gaan. Onze eigen huiscultuur die keer op keer een kleine verandering ondergaat en bij iedere generatie groeit aan maturiteit. Het bier werd gedurende een jaar houtgelagerd waarna het werd geblend met Duitse rieslingmost van Weingut Nagel. Na het blenden verdween het bier opnieuw extra jaar op houten tonnen. Het werd een frisse, funky wilde grape ale van 7,5% die mooi balanceert tussen lambiek en natuurwijn.

Sour ale with Riesling grapes so in effect a grape ale like the ones we have seen coming from especially Italy in recent years; mixed fermentation, with a house culture yeast called 'Méthode Ghantoise' and originally assembled from the cultures of different established sour ale and lambic producers some years ago. Thin and open, snow white ring of foam on a misty yellow blonde robe with 'old golden' shade. Aroma of pronounced Brettanomyces and lactic bacteria effects, very bright, fermenting grape juice, 'horseblanket', wet leather, armpit sweat, green melon, sourdough, lemonbalm, ripe Granny Smith apple, damp hay, green pear, grapefruit zest. Crisp onset, lots of fizzy carbonation enhancing tartness and 'fraîcheur' here, lovely 'yellow-green' fruitiness, lots of green apple, white grape notes from the Riesling, green melon, unripe nectarine, lime - sour but with a softening fructose effect from the grapes. Smooth, slick, wheaty backbone under lots of continuing green-fruity tartness, melon, gooseberry, even cucumber - but also a retronasal Bretty funkiness (horse stable, sweat, wet leather) and mild floral hoppiness, a tad grassy and very 'fresh', contributing to the overall very bright, refreshing, crisp and elegant character of this beer. Each and every one of Dok's 'méthode Gentoise' beers has been stunningly beautiful so far and this one is no exception.

Pours unclear blonde. Small white head. Scent is full, intense brett, sharp , grainy. Taste is sharp, bretty, mild tartness, very malty. Absolutely lovely !

Cloudy blond yellow beer, small creamy off-white head, unstable, non adhesive. Aroma: a little funky, fruity, quite some apples, pleasant smell. MF: ok carbon, medium body. Taste: nice, clean acidity, some green apples, sourish, pleasant, a little bitter, funky. Aftertaste: dry, spicy, lemony, bitter touch, sourish.
