Inspired by Flanders Reds of old, Crimson Void is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in oak barrels. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.

This blended base was transferred onto the spent fruit (strawberries) and lees from our previous batch of Oud Bruin – Blood Witch. We refermented this with 200g/l Scottish blackcurrants, sourced from farms located within 60 miles of the brewery.

375ml bottle. Cloudy, brown-ish, dark ruby colour with average to huge, thick, firm, creamy, moderately lasting and lacing, beige head. Tangy, fruity, woody, mildly funky and malty aroma, notes of morello, raspberry, red berries, some oak, vinegar, prune, a touch of caramel and fudge. Taste is sour, tangy, dry woody, funky and slight fruity, hints of oak, vinegar, lactic acid, morello, raspberry, a touch of prunes, subtle hints of dark caramel and fudge with very low residual sweetness; lingering, dry and fruity finish with minimally increasing malty sweetness. Slightly oily, watery texture, astringent, simultaneously minimally greasy palate, medium, foamy-prickly carbonation. Wonderful composition, harmonious and balanced, a tad too aggressive in taste (at least at this state of maturing) - very good!
