We fermented the beer with Burning Sky’s wild yeast culture, with late additions of caraway, pink peppercorns and grains of paradise.
A hint of acidity and pepper spice compliments the yeast, resulting in a funky Saison, just how it should be.

750ml bottle. Wine Rack, Sharrow, Sheffield. Hazy, gingery gold. Messy, sticky, white head. Nose has yeasty bread. Soft spice. Hop leaf. Touch of saison funk. Taste is sweet and a little spicy. Fairly dry. Minimal bitterness. Light, slightly watery palate. Foamy carbonation. Light, leafy bitterness to finish.

Keg at salthorse. Pours golden, nose is funk, oak, sharp fruit, taste is funky, eggy, harsh.

Tap at Dynamo Bar, Brussels. Pours hazy golden. Aroma is saison yeast, fruits, apricots, some sea buckthorn. Flavor is sweet, sugar, some bitterness, fruits, sea buckthorn. Overall: okish, I love sea buckthorn, but this was too sweet and not sea buckthorny enough.

Draught @ Dynamo, Brussels. Smooth, slightly tart and earthy with some hints of sea buckthorn, saisony wheaty yeastiness and farmyard. Okay.

On keg at Six Degrees North, Edinburgh. Appearance - cloudy golden with a decent head. Nose - sweeter than expected. Citrus and tropical but not dry. Like Lilt. Taste - more of the same. Lemon curd and Lilt. Palate - close to medium bodied. Creamy and tangy but not as dry as I'd hoped. Overall - ok but hoped for less sweet experience.

Keg at Six D Edinburgh. It pours lightly hazy golden with a medium foamy white head. The aroma is fragrant, green, herbal, stone fruit, sea buckthorn, light sherbet, candied orange, hay, brioche and iced bun. The taste is dry, pretty spicy upfront, peppery, cracker, minerals, leaf, wood, sea buckthorn, straw, apple skin, brioche and sponge cake with a dry, peppery finish. Medium body and moderate, prickly carbonation. Pretty interesting combo of flavours. Decent.
