For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac’s Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

Draught @ Broadway Dive Bar, Manhattan. Opaque inky black with a very small frothy beige head, fruity mocha-rum aroma, low carbonation, medium bitter woodsy mocha taste with alcohol undertones, figs in the background, smooth thin body, long sweet finish with a bit of alcohol burn that remains for some time. Delicious!

Bottle from the Packie Pours an inky black with a thin tan head that quickly dissipates to a ring. Molasses and dark dried fruits sweet bread and light roast. Faint bourbon and alcohol. Probably this years smoothest variant still sickly sweet.

Pours a motor oil black from a bottle. Rich bourbon aroma, oak, even cinnamon. Similar flavor, quite sweet and thick. Pretty good beer.

500 ml bottle. Aroma is mild fig, raisins, with soft graham cracker. Flavor is mostly the same with mild amounts of fig and cracker. The bourbon is here but not in your face at 13.9% but certainly here. Real good.

500mL bottle, best before August 29, 2024, drunk 1/3/23. Dark amber, good clarity, little head. God damned graham cracker...smells like it. The stout behind it is lovely. Spicy bourbon and soft choco-vanilla. Not boozey or sugary. Figgy! Little/no graham in flavor thankfully. Spicy bourbon and rich malt with spice, vanilla, prune/fig and oak. Soft and sticky, pretty good attenuation. Light alcohol/bourbon dryness on the end significantly dries out things and cuts the texture.

Bottle split 4 ways. Aroma is grahm cracker, fig, dark chocolate. Taste is licorice, burnt caramel, lots of fig.

6 oz. pour on tap at the Crafty Chameleon Bar. It’s an opaque black with nice viscosity, no sparkle, lingering ring of beige head and no lacing. Aroma is strong bourbon, fig, graham cracker cookie, brown sugar and mild chocolate. (The latter particularly as it warms) Taste is bourbon bready graham cracker and fig. Mouthfeel is medium bodied with thick, smooth texture soft carbonation with hint of alcohol and finish as taste Overall they got what they were going for. A bit of booze sneaks through.

Bottle thanks to Rainer. Pours black with small tan head that lasts. The aroma is strong fig, graham cracker, bourbon, wood. Slick body, fig, dark chocolate, cracker malt, boozy, very nice.
