Medium dry cider that exhibits a mature apple taste and golden yellow colour.
The key to the secrets of cidermaking is the best quality apple juice pressed of ripe autumn and winter apples. In our cider we use a mixture of different apple varieties from our gardens in Saaremaa island. Therefore, vintages may vary from year to year. As each summer is different, the taste of apple mostly depends on the soil, growing and weather conditions.
Our ciders are produced by using the English cidermaking method. First we ferment the apple juice and then we let it mature for up to 7 months until it becomes a fine quality apple wine. Next we filter and blend the apple wine until we are fully pleased with its flavour. Our apple cider is pasteurized and that extends its shelf life to 2 years and gives a characteristic mature apple taste.

Sample courtesy of Grumbo, cheers Graham! Clear golden colour, short-lived white foam head and aroma of sweet apple, caramel, sugary. Taste is sweet, fleshy apple, some tartness, green apple, cooked apple, mellow citric, some wood & spice hints. Medium bodied, low carbonation, medium-sweet finish. Nicely drinkable.

Sample thanks to Grumbo. Pours clear pale gold, aroma of caramelised apple. Taste builds on this with a rich stewed apple character, some brown sugar, fine carbonation, tart apple fruit, moderately sweet. Decent.

Many many thanks to my Estonian Secret Santa 2016 for this bottle! Gushing stuff - didn’t expect this from a cider...Sourish tart beginning with a nice balance between sourness and sweetness. Refreshing, fruity. Lots of apples there with winey hints. Long and sourish fresh fruity aftertaste with hints of tannins and a nice refreshing fruity crisp apple aroma. Nice.

Bottle, bb 19.07.18. Pours yellow-golden. Aroma is sweet, apples, some sourness. Flavor is sweet and sourness, some apples, some metallic notes, some acidity. Carbonation is rather high. Overall: drinkable, but doesn’t stand out for me. There are other similar (and better) ciders available by Estonian micros, why not make something different i.e. cloudy english style scrumpy?! --- Beer merged from original tick of Öuna Siider on 01 Sep 2017 at 16:56
