Continuing our journey into spontaneous fermentation, this release is a blend of 1, 2 and 3 year old beers. We use a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in our coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity, this beer is unique to our landscape.

750ml, corked bottle, kindly shared by Finn at a session with him, Synny, and lmojoh. Declining white head, near-clear, tiny layer at the surface, poor lacing. Farmyard and ripe lemon on the nose, quite promising. Drying taste profile of lemon, wood, and yeast. Drying close. Decent palate cleanser. (Tromsø, 04.06.2024).

Lett uklar golden med hvit boblete topp som forsvinner raskt. Aroma; sitrus, humle, syrlig eple, eik, røde druer, brennesle. Smak; Surt eple, humle, druer, sitrus, eik, gress. Syrlig, svakt bitter, veldig tørr avslutning. Delt med Rune, Finn og Leif.

Bottle. No idea where from. Light haze on a medium gold. Slim super dense white foam. Nose has old lemon. Oak. White wine dregs. Some leafy, mulch like notes. Taste is tart and a little dry with a sour fruit citrus bitterness. Juicy and easy drinking with minimal acidity. Fine persistent carbonation. Juicy tart finish.

Bottle from Elusive brewery. Aroma is fruity, dry. Sherbert. Vinous. Opaque amber. Thin foamy white head. Heavy sour. Dry and tart. Vinous. Some grainy and malty hints. Light. Thin..Soft-fizzy carbonation. Long dry astringent finish.

Panda at home, post tasting thanks to Leighton and Dave for muling, 11/02/23. Moderately hazed golden orange with a decent just off white cap. Nose is barnyard esters, dry rot, funk, lemon tinged straw, hay bale, green berry must. Taste comprises grandads shed, light vanilla oak, funk, dry rot, lemon curd, hay barn, green berry skins, balanced acidic bite. Medium bodied, fine carbonation, semi drying close with a balanced acidic spike. Solid.

Bottle shared in London - picked up from BS online. Pours mostly clear deep gold with a small, foamy white head. Light sweet flavour, nice citrus notes, mellow funk, relaxed acidity. Medium bodied with fine, massaging carbonation. Lightly drying finish, a little pale wood, tangerine. Excellent. Well balanced and very drinkable.

Bottle shared at Columbus tasting . 2023-02-02. Thanks to Leighton. A hazed orange gold coloured pour with a white frothy white head. Aroma is tart, woody apricot funk, tangerine, earthy funk, pinch of salt. Flavour is composed of semi sweet, earthy funk apricot, tangerines, salt, woody, little yogurty funk. Good funk.
