Imperial Stout + Caramelised Miso + Intense Decadence
Directly inspired by food, our head brewer Brett was blown away by a dish serving caramelised miso butter in our restaurant at Wild Beer Jessop House. Instantly he wanted to recreate this flavours in a beer.
An imperial stout was brewed with lactose, sea salt, caramelised miso paste and tonka beans, this is a whole new take on ‘a decadent stout’. A direct descendant, or rather an older relative, of our salted caramel chocolate stout Millionaire. Intense and velvety the umami character shines through in Billionaire where salinity and a lactose body is matched by the intense umami on the miso paste.
With a long, warming bear hug of a finish this is a beer to be sipped and savoured.

Keg at the Cock Tavern - Havkney. Pours clear, black-brown with a creamy, tan head. The nose holds well realised chocolate character, moderate roast, dried fruits. Medium sweet flavour with mellow alcohol bump, some bittersweet dark chocolate, mild earthy bitterness, dried berries. Medium to full bodied with fine carboantion. Warming finish with more nicely rounded chocolate character, restrained bitterness, more raisins, light vanilla. Lovely beer.

Bottle from Bottle Baron. Black body with tiny yeast flecks beneath a medium beige head. Good lacing. Aroma of fried mushroom, ham and milk chocolate. Flavour of salted caramel, liquorice and nuts. Full body with a creamy mouthfeel. Soft fizz. This is stunning. The best Wild beer I’ve tasted.

Keg at the Hanging Bat. Pours black with a thin tan head. Aromas of chocolate, roast malts, toffee, faint salt. Taste is rich dark chocolate, coffee, lick of salt again at the back. Lingering finish.

Bottle. Beer Central, Sheffield. Nearly black. Super sticky, leggy, lasting, light brown head. Handsome. Nose has soy sauce. Dark chocolate. Vanilla. Oak. A bit briny. A bit leathery. Smells fantastic. Taste is sweet and salty. Light, cocoa bean bitterness. Mouthfeel is slick, smooth and silky. No trace of the ABV. Finishes savoury and sweet, and silky as you like. Absolutely lovely dessert beer.

Bottle from Crafty Bottle, Lincoln. Blood black colour with no real head. Aroma roasted malty caramel and slight smoke. Taste mid sweet with almost a meatiness. Mid carbonation, and a full body.
