Imperial Stout + Caramelised Miso + Intense Decadence
Directly inspired by food, our head brewer Brett was blown away by a dish serving caramelised miso butter in our restaurant at Wild Beer Jessop House. Instantly he wanted to recreate this flavours in a beer.
An imperial stout was brewed with lactose, sea salt, caramelised miso paste and tonka beans, this is a whole new take on ‘a decadent stout’. A direct descendant, or rather an older relative, of our salted caramel chocolate stout Millionaire. Intense and velvety the umami character shines through in Billionaire where salinity and a lactose body is matched by the intense umami on the miso paste.
With a long, warming bear hug of a finish this is a beer to be sipped and savoured.

Opaque dark brown beer, tidy tan head. Palate is smooth and fairly dry, decent fine carbonation. Smooth dry dark malts. Little dark chocolate and cream. Dark biscuits. Mild spice and dark fruits. Light finish. Decent.

Bottle from the new Wild Beer place in Bristol (Wapping Wharf) consumed in Frank at Home Field CL campsite, nr Lymington, Hampshire, Saturday 11th March 2017 Pours almost black with a tan head. Wow as the name suggests this is a priceless beverage, it’s a lovely beer, really rich, completely OTT, smooth, chocolatey, sumptuous, Indulgent, decadent, so smooth chocolate, fab. I had this last Saturday in the Pint Shop, I never rated it then somehow I knew it was going to be better in Bottle, and it is. A8 A4 T8 P4 Ov17 4.1

330ml bottle @ Chez Sophie. Pours black with small tan head. Aroma as a buttery sweetness, light chocolate, some caramel. Taste is rather slick with a rich, palate-filling blend of caramel, milk chocolate, hints of burnt wood and roast.. no single element pushes through significantly, rather they blend together as one. I wanted more chocolate so opened a Lindt chocolate egg which did the trick.

Keg at the Three Johns, Islington, 20/02/17. Black with a well presented tan cap. Nose is toffee, spice, charr, rich dark malts, fruit cake, raisins. Taste comprises dark chocolate, umami, fruit cake meets rocky roads, light soy, roast malt, biscuit, treacle toffee. Full body, fine carbonation, semi drying close with a well balanced rise of alcohol. Decent sticky impy stoot.

Keg at Three Johns. It pours jet black with a thick tan head. The aroma is sweet, sticky, juicy, big chocolate cake vibe, toffee, dark fruits, earthy coffee and fudge. The taste is rich, rather sweet upfront, loads of chocolate, milk chocolate, gateaux, toffee, fudge, toffee crisp, millionaires shortbread, warming alcohol, chocolate covered coffee and light boozy liquer with a lick, creamy chocolate finish. Full body, fine carbonation and oily, chewy mouth - feel. A touch sweet and sticky for my tastes, but I can see why others with a sweet tooth would love it.

Keg at Craft Beer Co, Covent Garden, London. A black coloured pour with a medium beige head on top. Roasty, malty, chocolate, caramel aroma. Tastes similar, roasty, malty, chocolate, caramel, vanilla. Smooth and luxurious imperial stout, very nice indeed.
