2019 SPON — Cab Franc & Zinfandel is a blend of two year old and three year old 100% spontaneously fermented beer, refermented with two varietals of Texas-grown wine grapes. Cab Franc in particular has become one of our favorite wine grapes to work with for its rich dark fruit flavors.

We received the grapes at Jester King last summer, crushed and de-stemmed them, and added them to the blend of SPON. After three months of refermentation, the blend reached total dryness. We then racked the blend off the fruit and into bottles and kegs for natural refermentatation.

Pours a clear, peachy amber. Small to no white head. Scent is heavy grape focussed, but not overkill. Smooth and balanced. Earthy fruityness. Harsh, herbaceous almost. Taste is sharp, pretty straight forward tartness , lactic acid, but it does work very well with the fruit. Dry , spicy / herbaceous / twigs, lovely fine summer ale for a summer day. As a lambic - minded beer it could be a bit more complex on the acidity, but as an AmLam , it's pretty good indeed.

Pours a clear amber with aromas of red wine, barnyard, and cherry, well balanced and tart. The taste is crisp, dry, and with notes of red grape, watermelon, and floral.

Bottle thanks to Kenny. It pours clear pink - red with a decent foamy white head. The aroma is fresh, fragrant, floral, zingy, red grape, jammy, juniper, redcurrant, Turkish delight and watermelon. The taste is crisp, dry, tart, puckering, zingy, watermelon, jammy, red grape, minerality, zingy, floral, light acidity, pithy citrus, watermelon, sherbet and light tannin with a drying finish. Medium body and moderate carbonation. Lovely stuff.
