Humlus Sapiens is a creature that lurks in the darkest corners of pubs, where hazy NEIPAs and dank IPAs reign supreme. Many of these humluses claim to be allergic to cider. That’s exactly why this cider exists – a bridge between Homo sapiens and Humlus sapiens.

Humlus is a creative collaboration between Brix Brygghus and Sandalen Gård. Brewmaster Sven Henry from Brix tasted through a selection of base ciders from Sandalen and proposed adding a carefully selected, aromatic hop blend to a cider fermented with cider yeast and the Rubinstep apple. The hopped cider was then blended with a second batch, fermented with white wine yeast and made from Santana, Discovery, and Rød Aroma apples.

Everything – from orchard to bottle – was done at Sandalen Gård, with hop selection, timing, and blending carried out in close cooperation with Sven Henry.

The 2025 Edition
In this vintage, the hops were steeped longer to pull out deeper layers of floral, citrus, and bitter tones. Sven Henry also contributed directly to the final blending process. The balance was tuned for complexity, resulting in more tannin grip, livelier hop aroma, and a drier, sharper expression.

Though the cider finishes dry, the hops lift what little residual sugar remains, creating an impression of gentle fruitiness. With refined bubbles and a bold character, this is a hopped cider that surprises even seasoned IPA lovers. A confident evolution – a new standard for the genre

On tap at Cardinal, Stavanger. Clear and extremely pale colour, nearly like water. Large but shortlived white head. Aroma of apples and hops, hints of pears. Flavour of apples and hops, moderate bitterness.

YG 280724. Pale golden color with a small white head. Aroma is sourness, apple. Flavor is sourness, apple, hop, citrus, pine, grass. Nice cider.

Bottle, 75cl. From trade with Bryne. A clear straw colored cider with a white head of moderate size. The aroma is apple driven, but with a citrusy, piney hoppy fruityness joining in. Feels a bit like perry too, in the back. It's nicely carbonated, semi-dry and full-bodied, with an apple driven flavor. Some pear and grass, and a citrusy, piney hoppyness. Medium length finish. Nice, for sure, but I wouldn't mind even more hoppiness. 240728

Strålende sommervær i mai, og en sykkeltur langs Gandsfjorden ender pussig nok ved Melkebaren, hvor jeg går planken: klar, blek strågul med fint skum. Saftig og forfriskende, lett karbonert. Deilig eplesmak (Rubinstep?), men overraskende lite humlepreg. Frisk avslutning.
