Aged for 1.5 years in a mixed-culture foudre before dry hopping at 24g/L of Sabro & Amarillo hops.

This powerful dry hopping rate was established as our house standard during the development of our DIPA programme back in 2016, and has since become an industry standard.

We’re thrilled that it yields exceptional results in mixed-culture beer too. A complex blend of funky and tropical citrus aromas give way to flavours of sweet pomelo, passion fruit, and a funky complexity derived from mixed-culture fermentation. A touch of tartness lightens the body and enhances drinkability.

375 ml bottle, as Cloudwater Funky IPA Sabro & Amarillo Dry-Hopped Foudre Ale Vintage 2023, at Cardinal, Stavanger. ABV is 6.8%. Slightly hazy golden colour, large white head. Aroma of farmhouse, farmhouse kitchen, brettanomyces, over-ripe and fermenting apples, oak and lactic acid. Medium sour flavour with the same elements. Unusual and interesting.

Panda, big thanks to Cloin. A light haze on this slightly dirty looking gold beer, small and short lived bubbly pale cream colour head. Palate is light and semi dry, good fine minerally carbonation. Light and thin malts but providing a game saving amount of sweetness for me. Tart fruits, getting a little acetic but not quite over doing it, the malt sweetness holds back the excess and the Sabro hops provide a welcome distraction. Mild cream coconut and slightly tart ripe pineapple. Modest lemon acid at the very end. Just on the edge of too much for me. I couldn't drink a 500 of this but a 100ml glass was pleasant

Bottle at home in Hackney - picked up from Cloudwater online. Pours lightly hazed honey-gold with a tight, creamy white head. Light-medium sweet flavour, super funky, some pine, lemon, grapefruit, salty sweat, a little white wine vinegar. Medium bodied with fine, massaging carbonation. Tart, acetic finish, more tangy citrus, pine needles, sturdy funk. A little taxing but enjoyable overall.

Bottle at home, from CW online, 10/12/23. Hazed marmalade orange with a decent just off white covering. Nose is sharp citric fruits, yuzu, damp oak, funk, light barnyard, pissy grapefruit, tarte fruits. Taste comprises bitter orange, acidic flicker, green berry must, funk, dry rot, hedgerow, herb. Medium bodied, fine carbonation, semi drying close with a balanced acidic rise and puckering bite. Solid exponent of the sub genre, no fucking about, sharp and pissy. Can't say I detected much/any Sabro mind, kind of lost in the funk cloud.
