Our collection of spontaneously fermented beers is a true expression of time and nature, featuring 1, 2, and 3-year-old brews matured in historic wine barrels from our winecellar. Clear orange blond beer, no head. Aroma: fruity, funky, earthy, wild indeed. MF: lively carbon, medium body. Taste: very chemical, earthy, dry, bitter, more earthy. Aftertaste: dry, spicy, lemony, peppery, ok, not the best.

Bottle. Color: Lightly hazy golden, white head. Aroma: Floral, fruity, herbal ans subtle funky. Taste: Very well balanced mix of fruity grape, some gooseberry and citrus, floral and herbal notes, subtle horse stable funk. Medium body, average carbonation. Moderate to over moderate tart, light sweet and very light bitterness. Nice one.

0,75l bottle at home. Yellow hazy color, small white head. Smells grassy, earthy, lightly vinous, tobacco, peppery, herbal. Full body, pearly carbonation. Tastes grassy, earthy, peppery, herbal, tobacco, light stone fruits, light grapes. Finishes bubbly, lightly dry and lightly sour with notes of sweet grapes, stone fruits and grassy notes.

Optisch bernsteinfarben und dezent trüb mit feiner Perlage und champagnerartigem Aufschäumen. Der daraus resultierende, weiße, feinporige Schaum fällt jedoch relativ rasch zusammen. In der Nase machen sich komplexe, vielschichtige, säuerlich wirkende Fruchtaromen von frühreifen Beeren, Steinobst und angenehmer Wildhefe breit. Der Antrunk kommt erfrischend säuerlich, feinrezent und gut moussierend. Der Körper zeigt sich mit einer guten Fülle, fein moussierender Rezenz, leichter Cremigkeit, sowie schöner Trockenheit und erfrischender Säure. Geschmacklich und aromatisch dominieren komplexe Säure- und Fruchtnoten. Frühreife Beeren, zarte Noten von Kern-, Steinobst und saurer Traube. Dazu mischt sich ein schöner, leicht animalischer Wildhefecharakter mit leichter Herbe im hinteren Bereich der Zunge. Das wunderschöne, harmonische und erfrischende Gesamtbild hat eine gute Drinkability zur Folge. Der Nachtrunk gestaltet sich weiterhin erfrischend, säuerlich und fruchtig mit herbem Wildhefecharackter, der sich letztendlich gut in der Kehle festsetzt. Fazit: Man muss nicht zwingen nach Belgien fahren, um solch tolle Biere zu genießen. Hut ab und riesen Respekt!
