Our first table beer! Brewed with a golden promise, wheat and rye malt base, this beer is a blend of 4 barrels fermented with Saison yeast,
lactobacillus and Brettanomyces. Dry hopped with 6 g/L Bramling Cross.
We used pellet and whole leaf hops to bring greater complexity and body to this beer. There are overtones of zesty citrus and chardonnay
grape skin while the modest bitterness really satisfies as it subsides to leave a mouthcoating, resinous finish.

Bottle at home in Hackney - sourced from HOTM. Pours clear, light yellow, mildly effervescent with a frothy, pure white head. Light sweet flavour with soft citric tartness, balanced dry funk, but of salinity, lemon peel, grass, pine needles. Light bodied with massaging carbonation. Lightly drying finish, nice cleansing saltiness, further citric tang, pale wood dryness, mild citrus pith. Wonderful beer. Great depth for the ABV.

Tap @ Balance Brewery taproom, Manchester. Still and carbonated versions available, so had a taste of both. Carbonated has a pleasant, fine effervescence but the still allowed the fruity nuances to shine through a lot more with a pronounced floral attribute and nice mellow sweetness. Fascinating wild flavours on subsequent sips with wine like suggestions and a light woody bitterness to close. Excellent table beer. Didn't taste weak at all.

Served normal and still. I tried both, of course. 😋 Right (carbonated)
