Can a drink be a window? This is a single variety bittersweet cider, matured in an oak cask, aged patiently, and bottled when it was ready. Yet it is also a campfire of burning peat, it is the caramelized honey on the joint of pork, it is the singular expression of this cider at this time in this barrel on this farm from these orchards. To us, each sip reveals a different flavour, a different light shining on an astonishing drink. What at first seems overwhelming and cacophonous becomes poignant and expressive, succulent and juicy. Cider, barrels, and time. Marvellous. 500ml. 8.2%.

Bottle form the Beer Shop, At Albans. It pours lightly hazy orange with a fizzy dissipating white head. The aroma is rich, medicinal, peat reek, Islay whisky vibes, tart puckering apple, zingy, crunchy apple, pear skin, damp hay and deep funky farmyard character. The taste is crisp and snappy initially, firmly dry, some tannin, dry oak, crunchy apple, white wine, gooseberry, Bircher muesli, farmyard, barnyard, medicinal, peat and dull bonfire character with drying finish. Medium body and a fine prickly of carbonation. Great depth of flavour. Really enjoyable..

500ml bottle from Ross on Wye. Golden colour, white foam head that dissipates to a thin rim and aroma of islay whisky barrel, peat, tar, iodine. Taste is apple, fruity, fleshy, bittersweet, with wood barrel, oak, tar, peaty, islay whisky, salty, and some drying tannin. Medium bodied, low carbonation, dry oaky cask & tannic finish. Nicely drinkable.
