Side Project’s Cory King and the brewers here at SARA chose several strains from East Coast Yeast, in addition to both breweries respective house cultures, and elected to ferment individual barrels with each, with the ultimate goal of blending the entirety into a final, mature, bottle conditioned Saison. The result is wonderfully complex and the perfect illustration of the shared philosophy between both us and Side Project

Bottle at share. Pours out a pale golden body, mild haziness, small foamy head. Aroma leads with grapes, mixed fruit. taste remains fruity while adding the yeast and assoiated funk. Not too tart, velvety.

From bottle at Ulfborg tasting 2019/06. Almost clear golden color with white head. Yeasty aroma, citrus, floral, funk, grass. Sweet and acidic taste. Light to medium oily body with soft carbonation.

ABV: 6.3%. Clear medium orange yellow colour with a small, frothy - fizzy, fair lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, peach - apricot, stone fruit, funk, light wood - oak. Flavor is moderate to light heavy sweet and light light acidic with a average to long duration, tart fruit, apricot - peach, funky, stone fruit, light wood - oak. Body is medium, texture is oily to watery, carbonation is soft. [20190615]

Tap at SARA. Pours lightly hazy yellow gold with a small white head that diminishes quickly with some lacing. Aroma is complex, white grape, plums, lemon, earthy, mineral, oak, bugs. Flavor is light tart, light plus funk, clean and bright, fruity. Medium body, soft mouthfeel. Excellent.

Poured from a 750 ml bottle. Aroma is fairly fruity with quite a bit of pear, red apple and over ripe stone fruit. Faint citrus notes with medium light peppery and clove phenolic notes. Medium musty grape notes and light oak and tannins. Pours a slightly hazy, yellow gold with a medium sized, medium thick, pillowy white head that recedes steadily to a thin film that lingers on the edges. Flavor has a medium light to mdoerate sweetness with a light acidity. Light grain notes and low bitterness. Moderate musty grape, pear and lemon notes with a bit of red apple and tropical fruit. Light pepper and clove notes. Hints of alcohol spice and oak. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, another nice saison from SARA. I like the East Coast Yeast presence and it's fruitiness.

Bottle thanks to Russell. Pours a hazy gold with medium white head that lasts. The aroma is yeast, lemon zest, oak, floral. Slick body, citrus, yeast, oak, nice tartness, light dry finish, enjoyed this.
