This natural sparkling wine was born from the idea of combining two fruits from the Rosaceae family: the quince, fruit from forgotten orchards, and the apple, traditional fruit from the Pays d'Auge. This original co-fermentation reveals a delicious quaffable cider, with unexpected aromas of blood orange peel mixed with the freshness of the apple.

Terroir
Victot-Pontfol. Nutrient poor clay and oxfordian marl soil.

60% bittersweet apples, 40% quinces.

Bottle shared, from Épicerie fine in Crambremer. Clear golden, nice white head. Crisp apple and quince, apricot, a touch of white wine, pear, light mineral, lemon. Medium sweet, lighter sour and a soft bitter finish. Crisp medium bodied, medium dry. Very good.

375mL bottle with code L13211, drunk 12/6/23. Clear, bright maize-honey. Nose is quite interesting, though the first thing I get is the brett, followed by oak. But then it's a maze of apple and quince with a light bit of vegetal notes (probably just skin), as well as light pepper, gentle but ample acidity and more oak and vanilla on the finish. Sweet, soft, good acidity on the end, with a very curious, unique flavor profile that leaves my best description as vegetal with white pepper. I guess it's the quince, obviously. Juicy as all hell, sweet, but with ample balancing acidity and light oak/vanilla, as well. Lovely, as always.

375ml cork & cage from Appalachian for $2 more than it should be. B2273 stamped on the cork. Pint glass @home. Way too big of a head over a clear, medium gold body. Dinosaur floral, bittersweet apple skin, veg & olive brine(descriptor stolen from my wife). Bittersweet apples & some bitter lettuce upfront. Sweet onion & pineapple, musky fruit, fermenting nectar, bittergreen. Heavy keeve-like maceration sweetness & popsicle stick dryness simultaneously. Much better as a blend than straight quince. It provides great texture but it's far too floral at times. Maybe too sweet & under proofed, but the small format is nicely carbed & appetizing when it counts.

375mL bottle, pours a clear pale golden blonde with a voluminous, quickly-dissipating white head. Nose is unusual, with a very woody funky character and bone dry apple skins. Flavour somehow seems simultaneously bone dry yet with plenty of sugar, with pear, apple skins, light funk, and lots of wet wood. Unusual but complex and creative. Always interesting these Dupont ciders. Very good.
