The human tendency to seek patterns in random information. The strongest of our core range was inspired by sipping (rather strong) beers and philosophising about life. A Belgian-style Tripel of a simple composition – the palest Pilsner malt, sugar to lighten the body, and some hops to balance it out.

440ml can from Micro Beer Crate. Cloudy gold with foamy white head, modest retention. Aroma of doughy malts, citrus peel, coriander, some banana. Taste has a warming alcohol, moderate grassy bitterness running through, lots of citrus peel with a yeasty bread background, some honey and dried apricot. Nice smooth to sticky body. Good.

Bottled. Hazy orangeish golden colour with a mediumsized white head. Aroma is citrus, some spices, mild toffee notes. Flavour is rather sinmilar to the aroma, but leaves a bit thin compared to real old-school tripels.

Bottle at home in Hackney - picked up around town I think. Pours mostly clear copper-gold with a foamy, white head. Has ample sun-kissed sourdough bread character, some yeast, a little golden raisin, honey, touches of bitter grass and grain husk. Medium to full bodied, lightly oily, with fine carbonation. Warming finish, subtly sticky, more dry pale bread, alcohol, grain husk, hay, toasted honey. Not bad overall.
