Aged for a year in Heaven Hill bourbon and cherry bitters barrels. ParaboLux takes our classic Parabola Imperial Stout and adds a twist inspired by chocolate cherry cordials. We added Luxardo Cherries and Tahitian vanilla beans, accentuating intense flavors of black cherry, dark chocolate, vanilla and s'mores for an elegant & deLuxe and Luxurious version of parabola. The cherries were aged in casks of Parabola for five years.

12 oz bottle. 2023 Vintage. Aroma is similar to Cherry Cola with some bitters. Flavor is soft bourbon with moderate cherry and ends on strong bitters. As I sip I realize the bitters have drowned out the vanilla and some of the barrel. Body is lean. I was really hoping for a lot more out of this.

12oz bottle, 2024, drunk 10/31/25.
Dark, clear. Deep tan head fizzles very quickly to nothing. Can't even get a picture of it in time.
Very liquorous, with strong spice of licorice and cherry brandy-like notes. There's a sweetness on the end of caramel, light fudge, possibly bourbon, though the bourbon isn't very distinct, unfortunately. Some lingering dark chocolate and more of this cherry-soaked liquor character. Not alcoholic, surprisingly.
Big cherry and big peppery spice with a bit of a peppery carbonation and heat, though not sharpness, coming from somewhere. Fudgey and sweet, but not syrupy. Again, the lack of soft, round, gently spicy bourbon really hurts this, as you have weirdly licorice-forward cherry/spice in its place. Maybe this one looks a little better on paper than in actuality, though it's far from unpleasant or anything like that.

Thanks D.Lytz for sharing this one! Pitch black colour with a small beigeish brown head. Aroma is liquorice, some toffee, mild vanilla, toasted and coffeeish tones with mild dried fruitiness too. Intense. Flavour is as intense with coffee, liquorice, mild vanilla, syrup, duge and some dried fruits to it. Big. Nice.

Opaque colour, tiny beige head. Roasted mix of bourbon and cherries in the nose. Medium-bodied. Roasted, some dark cherries, bourbon. Ok.

Bottle. Pours clear mahogany, small tan head, some lacing. Aroma is cola, cherries, cocoa, bourbon. Flavor is medium sweet, light plus bitter. Medium body. Better than expected

Bottle from the brewery. Pours dark brn/blk with a transient tan head. Aroma is very cherry with dark chocolate. Full bodied. There's definitely heat, but it's like flavor. Bourbon and vanilla and dark cherry. Otherwise there's a lot of dark, non-sweet cherry, chocolate, and vanilla. Not dry. Not really sticky. Bitter? Heat substitutes. Nice flavor.
