We started with a base beer matured in our Missouri oak foeder for 11 months, which provides a hardy and deep foundation for the fruit. Then we added 500 lbs of whole cluster Mourvèdre, which contributes a more rustic fermentation profile and affects the aroma, texture, and tannin structure of the finished product.
After naturally conditioning for 9 months, Mataro presents notes of red plum and raspberry, supplemented by a lovely herbal spiciness from the whole cluster refermentation.

Tap. Pours clear candy apple red, small white head, good lacing. Aroma is vinous, grape, wine, oak, dusty. Flavor is light tart, light funk, vinous. Quite nice. Light body

Bottle pour at Farmhouse Fest 2024. Pours murky red. Aroma has leather, dried cranberries. Flavour has dried cranberries and raspberries, dry grass. Solid.

A taster shared with Josh, Matt, Phill, and Ryan during FHF WITH priceless Rachel's help (got it back!) in organizing all the mess with glasses. Appearance: rep copper with a white head. Aroma: lots of berries, oak, some dryness. Taste: same with a nice amount of bugs. Overall: good one.

On tap at Chuck's Greenwood, pours a hazy rosé red with a small off-pink head. Aroma brings out rustic saison yeast, rosé notes, a touch of vinous notes, and dry floral character. Flavour is more dominated by the musty red grape skins, followed by plenty of buggy notes, and oak. Dry, vinous and buggy finish in good balance. Excellent.

Dark red with just a thin head. Vinous aroma, deep fruit on the palate, touch of brett, lots of tannins, a kiss of sweetness before a nice off-dry finish.
