Keg at the Beavertown Extravaganza, day two, 09/09/2017. A black / mahogany brown coloured pour with a lasting dark tan head. Aroma is oak barrel, brown sugars, roasted malts, berry, charcoal. Flavour is composed of bitter roast, oak, charcoal, bitter coffee grounds. Palate is medium full bodied, bitter, semi sweet, moderate carbonation. Not much bretty funk.

Bottle, 0.33l. Aroma of roasted malt, bourbon, chocolate, nuts and coffee. Pours almost black color with thin creamy brown head and sparkling appearance. Taste starts with sweet and rich roasted malt and caramel, follows by bourbon, sourish dried fruit, mouthfeel is smooth and warm, while finish is mild bitter. Full body, thick creamy texture and average carbonation in palate. Better than Brett Michaels...

Bottled 16-08-17. Gave it 2.5 years but still not super bretty, just lightly leathery in the background. Bitter, strong and a bit boozy, with lots of coffee roast. Bourbon is there, but not overpowering, light but smooth, some wood. Not bad, bit weird.

Tap @ Borefts 2017. Black. Malt, roast, vanilla and a hint of brett in the aroma. Maltyyet dry flavor with a soft sourness, even pushing away the vanilla and bourbon flavors. Hint of oak. Nice. Bottle tasted in jan 2018. The brett is taling over control.

Bottle. Color: Almost black, light brown head. Aroma: Roasted malt, Bourbon, hints of Brett and booze. Taste: Roasted malt and coffee, chocolate, very nicely balanced with Bourbon and vanilla from the barrel aging. Subtle funk notes and slightly sourness of the Brett yeast, at one moment clearly present and at the other moment overwhelmed by the Bourbon. Nice. Moderate to medium sweetness and bitterness. Bit boozy. Long lasting finish. Bit sticky mouthfeel. Full body, soft carbonation. A lot of taste and complexity, great balance. Great beer.

Black with thin dark head. Aroma has some funk and also liquorice. Flavour is similar. Funky and dry. Very rich and thick too. Lots of burnt caramel bittersweetness. Brett tanginess hangs around in the aftertaste.

Bottle at Arendsnest. Very thin, loose head, almost immediately reduced to a wafer-thin pale greyish beige ring over a jet black beer with thin burgundy edges. Aroma of chocolate liqueur and pure bitter black chocolate, coffee, lots of vanilla-ish wet oak wood, bourbon galore, wet leather, blackcurrant, dry pipe tobacco, cured meat, burnt toast, old sherry, smoked plums, figs, tar. Sweetish onset, dried raisins, hints of ripe blackberries and baked banana slices, sourish undercurrent from roasted grains, softish carbo, very full, thick, oily and viscous body. Deeply built, toasted and nutty maltiness makes up the big black core of this majestic beer, with a beautiful dry and powdery yeastiness in the end, very well dosed, leathery-Bretty without the Brettanomyces effect becoming overly prominent. Finish is beautifully long and complex, with warming bourbon (including actual sweetish bourbon flavour) and a lot of vanilla-scented, dryingly tannic oak wood. Very deep, complex masterpiece of a stout - still De Molen's forte - which, without a shadow of a doubt, only has the potential of becoming much deeper and more interesting with a few years of cellaring (and therefore ongoing Brett refermentation) on it. Must find a few bottles of this to age!
