A Spontaneous Golden Sour Beer Aged in Oak Barrels
This golden sour wheat beer was inoculated in the traditional Belgian fashion of spontaneous Lambic beers. While it was still boiling, we transferred it outdoors into a shallow tank to cool down naturally overnight and allow the wild yeasts and bacteria in the air to float down and begin the fermentation. We then let the beer age untouched in two oak barrels for one year before bottling and naturally carbonating.

Appearance - 6 | Aroma - 6 | Flavor - 6 | Texture - 6 | Overall - 7
Pale. Relatively flat. Has some vinegar notes, barrely, some stone fruit but this is quite esoteric, weird even.

A hazed golden ale with a thin lacing white head. In aroma, sweet fruity malt with light fruity esters, light cork, light buttery notes, pleasant. In mouth, a nice sweet fruity mix of ground cherry, cork, brett, Epsom salts, very nice and complex. On tap at brewery.

Annie hated the smell of this, I dig it, awfully lambic entry territory. Nice rustic finish.
