Good Evening is a blend of Cortland Cider, Skin Contact Vidal, Honey and Honeycomb.

In the cidery, we think about each vessel as a book in our library. Liquid books, that you can blend together.

Ok, it's not a great analogy.

Regardless, the novellas of Vidal, Cortland and Honeycomb were always meant to be chapters of the same story.

Vidal's bright acid and natural honey notes bridge the fresh Cortland aroma and waxy texture of the comb in a way that can only be described as mega tasty.

Complex sugars in the comb have been slowly chewed up and turned to soft funk by our native brettanomyces. This blend reminds us of all the reasons we like dry saison and wines made with a human touch.

Hazy and pale. Light greenish colour. This has a nice tart apple note, slight vidal accent. Some floral accents from the honey. This is good - all the sugar stuff rounds it out.

5oz pour at Stillwell Freehouse. Pours clear pale blonde with small white head. Apple skins, tons of barnyard manure, and some floral notes on the nose. Flavour has tons of funk, light acidity, musty grape skins. Sweetness is well-moderated. Very nice.

750ml (thx, Mathieu A.!) @ Ryan's shared with Faress and Josh. Appearance: hazy blonde with almost no head. Aroma: pretty nice funk, apples. Taste: very simple and light, some fermented vegetables, not really much of apples or funk. Overall: well, just ok, especially for Revel.

Aus der Flasche (Vintage 2019) im 2023-11 getrunken. Dieser Cider-Wine-Hybrid aus ca. 1/5 Vidal-Wein und 4/5 Cortland-Apfelwein auf Honigwaben gereift zeigt sich wunderbar golden im Glas. Vom Honigeinfluss und vom Wein ist hier nichts zu entdecken. Es bleibt ein sehr gutes, aber auch klassisches Cider mit deutliche herb/sauren Apfelaromen.

A hazed pale blonde cider with aroma of sweet apple, light brett, light lactic notes, very nice. In mouth, a nice sweet fruity apple mix with light acidity, light Brett, very nice. Bottle from cidery.

(750ml bottle from the cidery webshop) Pours very lightly hazed pale straw gold with instantly dissipating white bubbles. Aroma of sweet floral apples, lemon curd, intense floral honey, complex white grape and Prunus overtones that definitely recall Vidal table wines, smooth soft funk, light lactic acidity. Flavour is a little less sweet than the nose with fresh crisp sweet-tart McIntosh-like apples, fresh lemons, citrus pith, soft honey and gentle wildflower perfume, more than a little white wine vibe despite not being terribly 'grapey'. Mineral but not heavily crisp, soft floral almost peachy finish with gentle tannins and light dusty funk. Medium bodied, slick and oily, filling carbonation.
