500mL bottle, pours a clear blonde with a small white head. Aroma brings out lots of wild yeast, followed by buttery rum barrels and a bit of toffee. Flavour is quite dry, yet complex and multi-dimensional, with big wild yeast, plenty of funk, lots of buttery rum, some booze, and funky crisp apple skins. The funk goes well with the rum, and the whole thing finishes dry enough. Very good.

Pale, slight acidity, lots of green apple to this. There's a decent apple, and some sweetish rum, and bit tannic.

Brown bottle, 500 ml, 2017 vintage, at Sébastien Bertrand, savoured on 18 December 2021; eye: straw-coloured, slightly cloudy, no effervescence, no head, no lacing; nose: green apple, acidity, slight oak; mouth: green apple, acidity, slight oak, finale in green apple with light presence of wood, medium body, good carbonation, lightly sweet, sparkling texture; in summary: nice surprise FRANÇAIS

A pale blonde cider with aroma of sweet tart mix apples, light Brett, light woody notes, pleasant. In mouth, sweet apple jam with Brett, light lactic notes, light wooden barrel notes, pleasant. Bottle from cidery.
