Checkpoint is fermented with wild yeast.
It's made from the natural water source below our fields. The wheat and barley we regeneratively grow next to our brewhouse. And it’s fermented with wild yeast native to our farm that we captured in our grain field. All of the water, grains, and yeast come from within hundreds of feet of the brewhouse.

Canned 4/21/23, drunk 5/13/23. Touch of haze, pale golden-honey. Small, white head, moderate-to-low retention. Nose is a bit of funky wild yeast which is surprisingly interesting and not acetic or anything strange for being harvested from barley. Strong wheat, light vanillin, rustic grain and light mineral. Hint of lemon. Soft, malt and wheat-rich texture, good attenuation and depth with light lemon, interesting wild yeast that adds light tartness but is pretty tame. Hard to describe. Cool beer. Much more interesting than your average American wheat ale.
