2020 375mL bottle pour at Tørst, 4/29/23. Clear, rich blonde-honey. Small, white head. Super rich culture providing gentle lactic and big Brett. The elderflower is there but so well-interwoven, I couldnt pick it out blind. Huge mineral for days, very round, soft oak. Funk and mineral for days. So well-aged and soft. Soft, malty, juicy elderflower I guess, but no bitterness that you usually get with it. Round oak, light lactic tartness and interesting other culture notes. Fruity and with massive mineral funk. Stone fruit, hints of sulfur. This is damned fine stuff. Just as good as any Hill saisons.
