Innovation, sustainability, and quality are just a few of the values we share with Freestyle Hop Farms, located at the top of Te Tauihu (the South Island) of Aotearoa, New Zealand in Nelson’s iconic Moutere Valley. Freestyle’s cutting-edge hop breeding program, in partnership with Garage Project, is a great inspiration for us here at Trillium with new, exciting varieties that allow us to push boundaries in recipe development. From searching out intriguing advanced selections to intensive sensory analysis and trial brewing, The Freestyle team is dedicated to producing the most flavourful, unique, and intensely aromatic hops in the world.

Codename: Peacharine is one of the latest advanced hop selections from Freestyle’s breeding program, displaying a complex nectarine and citrus character with sweet fruit, lime zest, and tropical notes. To showcase this vibrant new hop variety while celebrating our 10th anniversary, we developed Encoded IPA.

Keeping an eye toward creative possibilities with Peacharine while retaining the core elements of what works best in Mosaic, the aroma is a stunning display of hop saturation. Juicy peach, ripe stone fruit, and zesty citrus notes are complemented by overripe pineapple, mango nectar, and grapefruit. Supremely soft and palate-coating with low bitterness, Encoded holds no secrets to blissful drinkability.

16 ounce can from Matt S. Hazy yellow gold pour. Frothy white head. Fragrant aromas of stone fruit and citrus abound. Flavor is more of the same. Sweet peach, apricot, pineapple, tangerine, lemon. Sticky mouthfeel. Low bitterness, big juiciness. Well done.

Pours a hazy orange amber from a can. Big overripe pineapple, some peach, a little dank pot in the nose. Similar flavor but not subtle, not well balanced. Good beer.

Pours murky dark gold into a tulip. White head with little retention recedes leaving scant spiders to hug rim. Lychee, melon and summer pit fruit aromas. Medium bodied with sweet melon, apricot and peach upfront turning to lychee, dusty peach fuzz and melon rind in the earthy medium length finish.

Fort Point draught, 3/21/23. Heavily hazy, blonde-golden-maize. Small, white head. Juicy, peachy, tropical but with some deep, subtle spice. Light honey, biscuit, cracker from malt. Clean yeast, no resin, alcohol. Juicy, soft, interesting tropical fruit, stone fruit, citrus fruit melange. Creamy texture, great maltiness with high attenuation.
