Blend No. 83 22|23.
For this Druif, we macerated Pinot Noir (Spätburgunder) grapes from Harth+Harth, a biodynamic, Demeter-certified natural wine maker from Rheinhessen, Germany. Maceration took over nine months before being blended and bottled. We used over 60% of old lambik, rendering the weighted average age of this blend to over 28 months on the moment of bottling. The final fruit intensity of this blend is 425 grams of Pinot Noir grapes per litre of Druif, that is 320 grams in this bottle. Half of the cereals used to brew the original seven lambikken were sourced in Pajottenland.

Bottle, celebration for a certain's publication! Nose is absolutely on the money. Lambic and sharpness. Just perfect. Colour of red apple cider / a dark red one. I cannot really describe the perfection of this beer to me really - it's just spot on with this maturity from the pinot noir, a sharpness of the lambic, a sweetness that reminds me of the best ciders. It's just spot on

Bottle. Blend 83. At da Droom. Deep rose pink with a soft haze. Ring of dense pale pink. Nose has mellow red grape. Notes of sweet strawberry. Some ripe watermelon. Some salinity. Light fresh cut oak. Taste is light sweet with a hint of tartness. Very juicy and drinks easy at the 8.5%. Juicy overall with a semi dry close. Lovely.

Blend no. 83 22/23, bottled 06/07/2023. Red body, with a slightly pink head. Aroma of basement, funk, red grapes, some red wine, some apples. Tastes similar. Medium mouthfeel, with an average carbonation. Finishes dry, tart, vinous, a bit funky, with green apple, dark grape skin, some salty impression. Lovely stuff. The nose is really beautiful, with lots of rustic funk and vinous notes. More on the tart side, which is really fitting here though. Score: 9 / 4 / 8 / 4 / 16
