We often leave a few exceptional barrels from previous batches to use in our Off The Rack series. This year, we have selected a few ripe barrels from 2022 and 2023. Tasting great, we decided to create an OTR blend of vintages for this year’s version. We took our best barrels with the higher ABV due to the angels’ share that has evaporated over the year in Jim Beam barrels and infused them with the almost 3-year-old Heaven Hill-aged Paragon 22. There are a lot more deep notes of caramel and toffee, dried fruit, and even a subtle liquorice note, finished with a seriously nice mouthfeel that fills your palate with oaky, bourbony warmth. Cheers!

0.75l bottle. Brown body, no head. Caramel aroma, light coconut, vanilla, dusty barrels, fine. Lean, dry taste, nice caramel notes, minerally, weirdly lightly citric, ending a bit bitterness. Simple but extremely drinkable, very well balanced. Nice!

0.75 l bottle, oily dark brown, minimal head. Thanks Fandich. Aroma is intense oak barrel, roasty, burnt, molasses. Character moves towards wee heavy, sweetness, fullness. Sticky, full. Flavour is molasses. Spice. Alcohol hidden, moderate sweet finish.

Bottle, 750ml. An unclear dark brown beer with a small collapsing beige head. Sweetish and warming aroma with some oak and roasted malts. Toffee, dark dried fruit and chocolate. Some coffee. It’s full bodied and warming, nicely carbonated and quite sweet, with a gentle bitterness. Coffee, toffee, dark chocolate, roasted malts, booze and some oak. Lasting finish. Quite delicious this one, well suited to share with a bunch of friends. 241130

Small bubbly-creamy mediumlasting head, hazy dark amber color. Aroma is slightly sweet sour-ish boozy, old rope, caramel malts, bourbon, salty caramel, dark sugar, licorice, toffee, almonds, bark, oak, toast, chocolate, raisins. Taste is slightly dry sour-ish boozy, oak, caramel malts, bourbon, bark, fruit stones, dark sugar, vanilla, old rope, soil, almond essence, raisins, paper, medicine. Longlasting harsh bitterness, dry sour-ish boozy mouthfeel. Nice enough.
