This special version of our housemade cider was aged in used Honeyberry Wine barrels for three months, imparting a bouquet of strawberry, cherry, and apple aromatics.

Apple Varietals: Honeycrisp, Golden Delicious, Cortland, Gold Rush, Enterprise, Northern Spy, Golden Russet, Cox Orange Pippin, Ashmead’s Kernel
Yeast: Pét-nat, Wild Yeast
Special Ingredients/Process: Aged in Honeyberry Wine Barrels for 3 Months

Wine glass, 6oz pour, clear cherry red. Nose is great, cherry juice and tart apples, even under ripe strawberry. Almost jammy. Tart and lemony, clear apple with lots of berry layered over. Well balanced. High carb and prickly. Excellent.

Brewery draught, 12/12/24. Clear rosé. Lots of skin, oak tannin, dry strawberry and light cranberry with a touch of apple flesh and very low sweetness. Juicy, spritzy, tightly-carbonated with pleasant sweetness and moderate tannin. Good mix of fruit and various apple with no tannin/oak. Easygoing. Could be a touch more complex. Lingering succulent acidity.
