A unique project that drew inspiration from two 1930s books by Eduard Jalowetz on malting and brewing. Featuring an under modified pilsner malt from Valley Malt, and following the brewing schedule used at Pilsner Urquell a hundred years ago, Jalowetz tries to offer a peek into what malting, brewing, and enjoying beer was like in one of the beer capitals of the world at the turn of the 20th century.

Appearance: pale yellow color with a stifled semi-cloudiness to it and a three finger white frothy head which settled off nicely to leave some light lace
Aroma: peppery/spicy to herbal sweet hop tones; light honey with clean malts, wet grains/sweet hay
Flavor: meshes the prior noted aromas to a fine spicy to sweet blend flanked by a little bit of sweet yeasty doughy-ness; finishes semi-dry with a hop spicy tone
Texture: light to medium bodied, sessionable; good smoothness with nothing distracting anywhere; great carb level
Overall: a well brewed Czech pilsener very worthy of returning to.

Becher at The Roost. Looks amazing. Transparent, deep gold with head that laced with every sip. Grainy, malty nose, earthy, corn. Flavor has heirloom corn and grain, some yeast and some dough. Really nicely balanced. Soft, dry, lightly bitter finish. Really easy to drink.

Canned 10/16/24, drunk 12/10/24. Clear, deep, golden-brass. Large, well-retained, white head. Nose just bursting forth from the glass with intense malt, yeast and hop. Bright mineral, crisp yeast, dainty honey-like malt and just phenomenally fresh and spicy, herbal-tinged hops. Big, bold, malty body with honey, apple and white bread, drying out on the lager yeast-rich finish replete with intense herbal hopping, yet it's not too bitter. Perfectly balanced. And only 4.7% for all of this?? Insane. One of the better beers from Schilling I've had in a while, which is saying a lot. Man, did I drink something different than everyone else??!

16 oz can. Aroma is white bread and straw. Flavor shows toasted white bread and some spicy / black pepper Saaz. Moderate bitterness to balance the sweet bread. Pretty simple and straightforward lager.

Pours bright, clear yellow gold into a willi. White head with medium retention recedes leaving spot lacing to skim surface. Hay and biscuit aromas. Soft with sweet hay, straw and lightly toasted bread upfront turning to earthy mineral in the dry, medium length finish.
