Simple and elegant spelt Saison. Primarily fermented in a large oak foudre with saison yeast and refermented in bottle for natural carbonation. Brewed in February of 2018 and bottled in August 2018.

Bottle from Dudley: pours clear orange gold with white head. Aroma is deep woodiess, perfumey, funky, tree bark. Taste is lightly sweet, not very acidic or sour, rather just moderately tart. The wood is very nice, and I guess the spelt gives it some of its character. Very drinkable and actually somewhat refreshing.

Taster pour from the bottle at bottle share -- thanks Cara and Tom! Appearance is cloudy yellow/light brown with thin ring of light brown head with poor retention and no lacing. Aroma is tart fruit. Taste is tart fruit dominant. Mouthfeel is light-to-medium bodied with thin, frothy texture and finish as taste. Overall, more tart than I would like so not loving it. Just OK.

Cara and Tom on the bottle share. Aroma is mild oak, that magical yeast, and old fruit. Flavor has subtle oak, mild fruits, and light funky yeast. Mild sourness. Quite refreshing after 12 consecutive stouts.

750ml bottle from the General Store pours a lightly hazy orange with a flotilla of creamy white head. Nose is nice, rotting lemons, raw stone fruits, some white wine vinegar, stale moldy bread. Flavor has big lemon and grapefruit juice, white wine vinegar, some wet sour barrel. Finishes full bodied, prickly and sour. Bone dry too.
