Old Primeval is the nickname of a giant snapping turtle who has long roamed the waters of Georgian Bay. It felt like a fitting title for this Barrel Aged Imperial stout, which spent 12 months in Plantation Rum barrels. Neither beer nor turtle is to be trifled with.
We've been known to enjoy adding layers of complexity through adjuncts, but it's also gratifying to showcase what an unembellished commingling of elements can produce. In this instance, we took a very tasty Imperial Stout and aged it in the most beautiful rum barrels we’ve ever laid eyes on. The barrels sealed up right away and spent the next year imparting their boozy, burnt sugar and spice characteristics unto the stout.
This is a decadent and boozy sipper, with rich notes of molasses, brown sugar, and a subtle cherry hint. Get it before it returns to the deep.

Low tan head on a near black body. Nose offers up the rum casking, roasted malt and coffee, a hint of coconut, and the advertised molasses and a touch of cherry. Warm and slightly fluffy mouth feel. Dense and a bit sticky. Well balanced blend of the rum and other elements from the nose. Cherries take on a bit of sourness in the aftertaste. sustains well. Another great Bellwoods IS.

Jet black, medium brown head, quite a bit of sediment in the bottle. Boozy rum soaked oak, vanilla, soy, and burnt sugars, with some intense soy flavoured roasted malts. Thick oily mouth feel, medium to high bitterness. Thick, sweet, syrupy finish. Dark, sweet soy, coffee, and rum soaked oak barrel.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some lacing notes. Aroma of black chocolate notes with some nice rum notes with smooth vanilla notes. Taste is also a mix of black chocolate notes with some nice smooth rum and vanilla notes. Body is about average with good carbonation with some alcohol notes that are discernible. Solid rum BA stout.
