Last winter we filled a single French Shiraz barrel with a portion of the first edition of Anthology, our annual 10% ABV Imperial Stout.
Having aged in oak for a year, the beer has retained its rich, chocolate tones – and developed additional layers of complexity. Expect notes of dark chocolate, rich dark fruit, oak and a clear but not overpowering vinous character. Add in a soft carbonation for a luxurious texture and you have a very special beer that is absolutely not to be missed.

(Cask at Gallows Bird Real Ale Festival 2019) The beer poured black. Its head was medium sized and lightly brown. Aroma had burnt malts, liquorice and soy sauce. Palate was full bodied with medium carbonation. Flavours were burnt malts, mint chocolate, sweetness, ash and bitterness. Aftertaste was sweet, burnt and bitter. A surprisingly pleasant burnt brew.

Cask @ Gallows bird, real ale festival. Pours near black with almost no head. Aroma has licorice, roastedness, tobacco notes, malts. Flavor has licorice, coffee, malts and hops. Roasty, dry finish. Pretty good.

Pigs Ear. Cask. Opaque dark brown beer, small tan head. Smooth dry palate, mild carbonation. Dry dark malts, a little spicy and a little tangy. Fairly dry finish. A bit simplistic but okay.

Cask at London Drinker Beer & Cider festival 2018, Kings X, London. A black coloured pour with a medium beige head on top. Roasty, malty, chocolate aroma. Tastes roasty, malty, chocolate, dark fruit. Bitter/sweet imperial stout.

ABV: 10.0%. Clear dark black brown colour with a small to average, frothy - creamy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy malty, dark malt, roasted, sweet malt, chocolate, alcohol. Flavor is moderate to heavy sweet and moderate bitter with a long duration, alcohol, chocolate, dark malt, light dark stone fruit. Body is medium, texture is oily, carbonation is soft to flat, finish feel is warming and light alcoholic. [20171206]

Pigs Ear BF. Dark chocolate aroma. Dark and glossy. No head (standard). Boozy malty chocolate. Medium bodied. Creamy. Flat carbonation. My final note says, "IK boozy. 3.5." Whatever that means.

Gravity cask at Pigs Ear 2017 - Hackney. Pours black-brown with a tight, frothy tan head. Nice aroma, moderately roasty, with sugggestions of dark fruits. Medium sweet flavour with nice dry roast character, nips of raisins, baking cocoa, a little rubber, scorched earth. Medium to full bodied with fine carbonation; good condition. Nicely balanced finish, with some ashy roast, mellow chocolate, leathery berries. Good balance overall, though not especially complex. Original review text: Can at home in Hackney - picked up at the brewery taproom in Hackney. Pours black-brown with a small, foamy tan head. Nice gear overall, with moderate sweetness, dried dark fruits, prunes, raisins, berries, light ashy roast, a little rose water, background coffee. Medium to full bodied with fine carbonation. Lightly warming finish with more rose water, cocoa, ripening berries, a little red grape, roast. Good one.
