A Dark Ruby looks black like a stout or a porter, but dark ruby red when held up to the light. With a very complex body, one sip should be all it takes to taste a hint of chocolate. With a very specific hop schedule. We have tried to make a slightly bitter yet sweet smelling beer.

Bottle 330ml. @ [ Chriso’s pre- Xmas Tasting 2015 ] - Chris and Ruth's House, London. [ As Lion Heart Dark Ruby ].ABV: 5.5%. Clear dark brown colour with a large, frothy, good lacing, mostly lasting, light beige head. Aroma is moderate malty, roasted, dark malt, caramel, vegetables notes. Flavor is moderate sweet with a average duration, dark malt, bread, roasted. Body is medium, texture is oily to watery, carbonation is soft. [20151206] 6-3-7-3-13

Bottle from Bernie’s Real Ale Off License, Solihull. Poured a clear reddish brown with a frothy light tan head. The aroma is dry earthy sweet caramel malt, light floral. The flavour is moderate bitter with a crisp watery yeast, light dry coffee palate. Medium bodied with average carbonation.

Bottle. Dave’s Knocking Out Cheap Beer Emporium, Sheffield. 5.5%. Clear, dark ruby red. Dense halo of tan head. Chocolate malts. Black cherry. Very vinous. Taste is soft, fruity sweet. Some stone fruit dryness. Mouthfeel is a bit watery. Finish has a little bitterness, that sticks around. Other than the mouthfeel, this is fairly decent, especially at a pound fifty a pop.

Bottle from brewery. Deep Ruby coloured with almost no head. Aroma is light fruity, taste light sweet with a toasted finish. Thin body.

The Pigs Ear wrap up tasting at ChrisO’s. Clear deep red -amber beer, small pale tan head. Palate is light, semi dry and has modest fine carbonation. Aged - oxidised tasting malts, a little thin cream. Tangy fruits. Light finish. Curious beer, tastes knackered.

Bottle shared at the chriso and Ruth pre-Christmas/post-Pigs Ear holiday tasting of 2015 - London. Cheers! Pours mostly clear, deep brownish red with a frothy, beige head. Hearty bread and dark fruits in the nose, with accents of toffee. Medium sweet flavour with rich toast, light toffee, raisins, minimal bitterness. Medium bodied with fine to average carbonation. Sweet finish with earthy accents, light cocoa, further toffee. Drinkable sauce.
